Japan Whisky 日本威士忌

從傳統的技術上來說,日本威士忌很忠實地沿襲了蘇格蘭的製酒技術,從技術到觀念,幾乎完全拷貝了蘇格蘭風格,二次蒸餾的壺式銅製蒸餾器,也都是堅持蘇格蘭的標準,不過日本人的實事求是,讓後來技術上的發展,青出於藍,更勝於藍,從而也變化出自己的風格。

因為緯度的關係,除了北海道比較接近蘇格蘭的地理風土,本島的氣溫通常比蘇格蘭來得高,所以在橡木桶中的熟成速度較蘇格蘭來得快,橡木桶對威士忌的影響也比蘇格蘭重。因此一些日本威士忌酒廠會特別著重酒廠地址的選擇,除了水源充足、品質良好外,環境氣溫的變化也是考慮的重點。

相較於蘇格蘭威士忌,日本威士忌酒質的特點是酒體較為乾淨,有較多水果的氣味及甜美,沒有蘇格蘭威士忌留下那麼多的原始作物大麥的氣味。
