普洱茶是中國雲南盛產的茶的統稱,屬重發酵茶,發酵時間比一般茶葉長。經發酵後,咖啡鹼含量相對較少,茶質反而較醇和,因此變得升價十倍。「在眾多茶種中,普洱學問最多,像紅酒般講究。像春天及秋天出產的普洱茶,質素通常最好,大多會壓成餅茶收藏,而夏天出產的就會經過人工發酵,多做熟茶。」
